Little Blue Waffle Wagon

by Brier Chung
(Portland, Oregon)

While restaurants are wonderful, many entrepreneurs are looking for ways to open storefronts with less overhead. And lucky for us consumers when they have a wonderful product! Enter, the Little Blue Waffle Wagon on SE 33rd and Division.

Homemade waffles, available in regular vanilla or whole wheat vanilla, are topped with butter, syrup and powdered cane sugar. Then come the add-ons! You can add maple bacon, apple chicken sausage, eggs, cheeses, fruits, whipped cream cheese, and the list goes on!

I went recently and had a regular waffle with maple bacon, rosemary sauteed mushrooms and Parmesan cheese. Now I'm not a "sweets" person, perse and next time will probably ask for it without the sugar and syrup, as it got a little sweet towards the end, BUT the flavors were amazing! The waffle is served gyros-style, with toppings folded in the middle.

This little trailer (with tent and heaters for winter) is definitely worth a stop when you're on the east side. They're open daily (closed Tuesdays) on weekdays from 8-3 and weekends 9-3. Right now you can't see the wagon (i.e. little trailer) when driving, so look for the big white tent next to Larry's Lighting. Lots of street parking is available.
