Food is series business to me! Being a Certified Ex Chef I take pride in knowing my food anything from a burger to Mexican to great sushi I analyze it all. Heck I even pick apart the atmosphere, the wait staff how they look, how they treat me, do they know the menu?

Yes I am critical from the very onset of walking in the door of any establishment. And I pull no punches on the quality! My

expectations are very very high. Why you might say. "Hey its just a burger" Well friends is got to be the best burger. And by best I mean, unique,does it say have its own identity? That's the key.

To me its not that hard to create anything perfect,but then again I do this for a living. I think sometimes people think to much at food and not allow there instincts to run free. Remember food is life. It should be eye appealing and taste wonderful. I can't think of how many people I have met in my career that think "hey I got a large sum of money I think I will open a restaurant"!

Like most things in life it does not really work that way. Food is different than anything in life. Why you ask,well because we all have to eat. And we all have a perception of what is good. We all grew up eating different things in life and we base our likes and dislikes on this.

My wife and I. Who just so happens to be a Certified Ex Pastry Chef, just recently moved to Idaho,where my job relocated me. We live in Caldwell. Food wise Caldwell is in the 1970's. Now this is not a bad thing. However we notice that there is really nothing unique here. We find a vast ouray of chain restaurants, your TGIFridays, Wingers, Applebee's you know them they run the globe. They do what they do striving to hit and cover all aspects of the market. Making it affordable for anyone walking in the door.

But we search for the ultimate experience. And hey it does not have to be expensive it has only to be unique and great! Not a lot to ask in my book.We live in farm country. Where you would think a great steak would be the number one thing to find? I find in this market that there are a lot of lower and middle income families who are, like most of us are on a budget. And dining out is sometimes a hard thing to do. But dining versus eating is the big difference. I think as Americans we forget that. We seem to focus on lets slam and jam out the door cause we got so much other stuff going on. If we would take our time to enjoy the little things in life a great salad,a great burrito,a great drink,heck anything food wise. We would come to understand food better.

I am over the next year going to visit some of the areas favorites. I am also going to go into Eagle Idaho where I am noticing a very diverse market of food developing rapidly. And I will go into Boise Idaho,cause it is the capital. And in all honesty it has some great places to eat at.

So with all that said. I look forward to having you come along and read my critics of the areas favorite restaurants. You will get a very unique,there's that word again. Analization of food in Canyon and Ada County's.

PROFILE

I grew up in Park City Utah in the bar/restaurant. My sister owns a very high end deli/catering. Which she just so happens to have bought from me. My brother Rick part owns a restaurant on North Shore Turtle Bay Hawaii. My brother Ryan is a Regional Chef for a major BBQ chain. So we all have that food thing going on. I made it a point to travel and learn as much about food as possible. I have found that you have to work in the field to really get a true understanding of the whole thing. Education is just a minor part of it.
